Burger Night!

Jenny's Best Burger Recipe

Makes 3 burgers

1 Lb 90/10 ground beef(organic grass fed best). If your splurging, then def go for the 80/20 beef!
3 Cloves chopped garlic
1.5 Cup chopped heart of romaine lettuce
1 Tomato sliced
6 Slices crunchy dill pickle
1/2 Small onion large chop
Sliced or grated cheddar, havarti, jack or other good melty cheese
Good quality buns like brioche or kaiser
Best Foods Mayo
Yellow mustard
Salt & Pepper
Olive Oil

Instructions:

1. Place all refrigerated items on counter to take the chill off

2. Gently, being VERY careful not to over work meat, add garlic to meat and loosely form 3 balls. Put on plate and gently use finger tips to spread meat out to patty shape. You should have lots of crevices, not a smooth burger. Crevices make for good flavor.

3. Generously salt and pepper the patties - the salt will make a good crunchy char crust on the meat!

4. Drizzle top of meat with olive oil and let set

5. Get your grill or grill pan very hot over high heat

6. If using a grill pan, then 1st toast your buns by drizzling olive oil on the insides and place face down on the grill pan until slightly golden brown.

*If using a grill you can toast your buns once you have cooked one side of the burgers.

7. Place your patties oil side down on grill/grill pan. Cook for about 4 minutes (medium doneness).

Flip burger. After 1 minute place cheese on patties. Cook for 2 more minutes then turn off heat and cover to melt cheese on top, about a minute.

Once melted, take cover off and let set - you don't want to over cook your meat!

*Try to work fast, you don't the burger to cool down. The hotter the burger the better I say!

8. Here is what makes my burger special - mix 3 Tbl mayo with the lettuce and onion. Make sure onion and lettuce are evenly coated.

*If you like spicy burgers then add Srirachi "Rooster" Sauce(red chili sauce found in Asian section of most grocery stores)or chopped chipotle chilis to mayo, then mix with onion and lettuce - DELISH!

9. Divide the lettuce/onion mixture between the 3 buns. Spread mustard on the other half of bun. Place the pickles and sliced tomato on the mustard bun, and burger patty(cheese side down)on the lettuce mixture.

Put all together and eat immediately!
